Calling All Curry Lovers

Thai Yellow Curry is with out a doubt, my favorite dish of the season. If I could afford to eat it everyday, I would. Due to the fact that I am extremely low on funds lately, I found this delicious vegan recipe online. I just made it and boy is it delicious!

Ingredients: 
- 1 cup vegetable broth
- 1 cup coconut milk
- 1 potato, pre-cooked and chopped
- 1 cup shredded carrots
- 1/2 head cauliflower, chopped
- 1/2 package tofu, cut in cubes
- 1 tbsp ginger
- 2 tbsp sugar
- 3 cloves garlic, minced
- 1/2 tsp turmeric
- 2 tsp curry powder
- 3 tbsp chili sauce
- 1/3 tsp salt

Preparation:
Bring the cocunt milk and vegetable broth to a slow simmer. Add the potatoes and vegetables and allow to simmer for a few minutes. Add the remaining ingredients and cook for about 8 minutes. Make sure to test the potatoes and cauliflower in order to make sure they are fully cooked. Enjoy!
